La birreria Elbschloss fu fondata nel 1881 a Nienstedten, nel regno di Prussia, ed era l'unica impresa industriale significativa di questo luogo. Fu costruita su parti dell'ex parco che appartenevano alla villa neoclassica Baur, costruita tra il 1804 e il 1806 da Christian Frederik Hansen. La villa Baur era comunemente chiamata "Elbschlösschen", da cui deriva il nome della birreria.
Il marchio più famoso di questa birreria era il Ratsherrn Pils, che nel 1978 potrebbe essere stato prodotto in un volume di circa 150.000 ettolitri. Inoltre, venne prodotta la birra scura Dübelsbrücker Dunkel, creata nel 1988, un riferimento al vicino Teufelsbrück.
