Von 1950 bis 1990 war Pau abhängig von der Produktion von Gas und Schwefeldioxid. Derzeit sind die wichtigsten wirtschaftlichen Aktivitäten die Ölindustrie, die Luftfahrtindustrie, der Tourismus und die Landwirtschaft. In Pau wurde Elf Aquitaine gegründet. Dieses Unternehmen ist heute ein Teil von Total.
Pau ist das drittgrößte Wirtschafts- und Universitätszentrum im Südwesten Frankreichs nach Bordeaux und Toulouse.
Fast jedes Jahr ist Pau Teil der Tour de France.
