Die Festung Coudray-Salbart wurde in der ersten Hälfte des 13. Jahrhunderts erbaut und ist eine bemerkenswerte militärische Festung.
Eine reiche Architektur: 14 Räume in außergewöhnlich gutem Erhaltungszustand, davon 12 Gewölberäume in verschiedenen architektonischen Stilen (8 für die Öffentlichkeit zugänglich).
Ein Verteidigungssystem mit einem in Europa einzigartigen peripheren Schacht (Gang im Inneren der Kurtinen).
Eine geheimnisvolle Geschichte: Das erste Dokument, in dem das Gebäude beschrieben wird, stammt aus dem Jahr 1460, während der Baubeginn auf 1202/1204 datiert wird. Das unter Denkmalschutz stehende Gebäude wird seit 1961 von den Amis du Coudray-Salbart und seit 2000 von seinem Eigentümer, der Communauté d'Agglomération du Niortais, betreut. An diesem kaum umgestalteten Prunkstück der Militärarchitektur wurden umfangreiche Restaurierungsarbeiten durchgeführt.
