Mike Janssen, formerly the marketing manager at a large brewery, felt it was time to dive into the family brewing adventure a few years ago. He and his then-wife, Mieke De Splenter, set their eyes on the De Dool castle in Helchteren, which once served as the summer residence of the abbots of Sint-Truiden. They had a small-scale but ultra-modern brewery installed there and began brewing. The blonde Ter Dolen was their first product.
The man who jokingly referred to himself as brewmaster-abbot has since left the castle, and Mieke De Splenter is now at the helm. Due to these family circumstances, she is now the first female brewer in Limburg. Her roots certainly point in a clear direction. Her aunt brews the Kapittelbier in West Flanders' Boezinge. An uncle was a brewer. A second cousin bottles Kwak. A nephew is the director at brewery De Koninck. Apparently, the brewing profession runs in the family.
