Shrimp fishing is practiced at low tide, for about 2 to 3 hours. The horse fisherman in a yellow oil jacket, high boots and with a sou'wester on his head, sits in a wooden saddle on his horse, dragging the heavy shrimp net behind him. The horses step into the water up to their chests. The fishermen rely on sturdy draught horses such as a Brabander. These calm and strong animals are excellent for doing the heavy lifting. Occasionally, the horse and fisherman come out on dry land to empty the net into the baskets attached to either side of the horse.
The prawns caught and cooked in this way are a real delight for gourmets, because they are so exceptionally fresh.
