Did you know that Dijon is the birthplace of the Kir? It is an invention of the canon of Dijon, who was also a much-discussed mayor of the city of Dijon. The drink was named after this Burgundian priest, Félix Kir, who lived from 1876 to 1968. This cocktail is based on Crème de cassis and the white wine Bourgogne Aligoté. For Kir Royal, the white wine is replaced by champagne or other sparkling wine.
