This Roman site in Barbegal is the largest ancient water-powered factory in the world. A study pulished in 2018 states that this site was specialised in ship's biscuits, and not in producing flower four the nearby Roman city of Arelate. Analysis of deposits showed that the mills shut down in late summer and autumn. A city would need a year-round supply of flour. This theory assumes that the flour was destined for ship's biscuits of Roman vessels in the Mediterranean. There would have been no demand for this in winter when the fleet laid up to avoid storms.
