The Moulin du Saut owes its name to its strategic position on the river. Built into the side of a rock at the narrowest point in the valley (7 m wide), it overlooks a 10 m-high waterfall or "saut". Thanks to the adaptation of the construction to the Alzou riverbed, the water here has the necessary force to drive the mill?s 4 pairs of millstones.
The date 1739 engraved on the lintel corresponds to the completion of the mill by the Seigneur de Gramat. Its three water chambers enable cereals to be ground. Upstairs, the living quarters feature latrines and a fireplace. A drinking water source, a bread oven and a stable complete the ensemble and ensure the mill?s self-sufficiency
