The region around Saint Omer is called Audomarois. The water-rich and marshy region to the north-east of it, the Marais Audomarois, is known for its market gardening. You can explore the waterways (the canal system) via boat trips. Along the way, you will see several times a "bacove", a flat-bottomed animal that is used to transport cultivated vegetables such as chicory, lettuce, leek, but especially artichoke.
