to the central square of Deventer, De Brink. Here you will find Bussink's Koekhuisje, where you can treat yourself to a second treat: coffee with Deventer cake. Inside the Koekhuisje it is warm and somewhat cramped. The ceiling is low and has heavy wooden beams. At the front of the store is a shop, behind you will find a café with antique wooden benches and tables. If you order a bowl of cake here with the coffee, you will get four different types. Some even more refined in taste than others.
Deventer and cake have been inextricably linked for five centuries. The Bussink company started in 1593 and soon specialized in the preparation of Deventer cake. This cake had to be baked according to the strict rules of the Deventer city council. Among other things, they determined the raw materials to be used. The aim of this was to guarantee that the cake had a long shelf life and could compete with cake from other cities such as Bergen in Norway. It wasn't until the twentieth century that Bussink started making other types of cake, such as gingerbread, candy cake and wholemeal cake. In the meantime, the company has been swallowed up by a large bakery group, but fortunately the original recipe of the Deventer cake has been preserved.
