El nombre "Mehlbek" se originó de la designación del bajo alemán para "Mühlenbach". Indica el Mühlenau que desemboca en el Bekau, donde se encontraba el molino de agua del cual surgió la propiedad de Mehlbek. Este molino de agua junto con la aldea fue donado por el rey danés Christian III en 1538 al caballero Johann Rantzau, quien fundó la propiedad y la granja. Su hijo Heinrich Rantzau amplió la propiedad con el pueblo de Kaaks y partes de las aldeas de Hohenaspe y Huje. Su nieto Erich Rantzau vendió la propiedad en 1616 a su pariente Cai von Ahlefeldt.
