De naam "Mehlbek" is ontstaan uit de Nederduitse benaming voor "Mühlenbach". Het verwijst naar de Mühlenau die in de Bekau uitmondt, waar de watermolen lag waaruit het goed Mehlbek is ontstaan. Deze watermolen, samen met de nederzetting, schonk de Deense koning Christian III in 1538 aan ridder Johann Rantzau, die het goed en de buitenplaats aanlegde. Zijn zoon Heinrich Rantzau breidde het goed uit met het dorp Kaaks en delen van de dorpen Hohenaspe en Huje. Zijn kleinzoon Erich Rantzau verkocht in 1616 het goed aan zijn verwant Cai von Ahlefeldt.
