Le nom « Mehlbek » est issu de la désignation bas-allemande pour « Mühlenbach ». Il fait référence à la Mühlenau qui se jette dans la Bekau, où se trouvait le moulin à eau dont est issu le domaine de Mehlbek. Ce moulin à eau ainsi que le village ont été offerts par le roi danois Christian III en 1538 au chevalier Johann Rantzau, qui a établi le domaine et la ferme. Son fils Heinrich Rantzau a étendu le domaine au village de Kaaks ainsi qu'à des parties des villages de Hohenaspe et Huje. Son petit-fils Erich Rantzau a vendu le domaine en 1616 à son parent Cai von Ahlefeldt.
