El monasterio de Ebstorf fue fundado alrededor de 1160 como el monasterio de San Mauricio en Ebstorf como un monasterio de los premonstratenses y a finales del siglo XII se convirtió en un monasterio benedictino de monjas. Es uno de los varios monasterios administrados por la Cámara Monástica de Hanover. Alberga una fundación femenina evangélica y una escuela agrícola. El monasterio es conocido por el famoso mapa mundial de Ebstorf del siglo XIII, su extensa dotación medieval, así como su biblioteca de manuscritos.
El monasterio fue fundado por Volrad de Bodwede, conde de Dannenberg y sobrino de Enrique el León. Fue mencionado por primera vez en un documento en 1197. Es uno de los seis monasterios de Lüne que se convirtieron en conventos evangélicos tras la Reforma.
