Il monastero di Ebstorf fu fondato intorno al 1160 come monastero di San Maurizio a Ebstorf come monastero dei Premostratensi ed è stato un monastero di Benedettine dalla fine del XII secolo. È uno dei diversi monasteri gestiti dalla Kammer di Hannover. Ospita una casa delle donne evangelica e una scuola agricola. Il monastero è noto per la famosa mappa del mondo di Ebstorf del XIII secolo, il suo vasto arredamento medievale e la sua biblioteca di manoscritti.
Il monastero fu fondato da Volrad von Bodwede, conte di Dannenberg e nipote di Enrico il Leone. Nel 1197 fu menzionato per la prima volta in un documento. Fa parte dei sei monasteri di Lüneburg che, dopo la riforma, divennero conventi evangelici.
