Het klooster Ebstorf werd rond 1160 gesticht als klooster St. Mauritius in Ebstorf als een klooster van de Premonstratenzers en was vanaf het einde van de 12e eeuw een abdij voor benedictines. Het is een van de verschillende kloosters die worden beheerd door de kloosterkamer Hannover. Het herbergt een evangelisch damesstift en een landbouwschool. Het klooster is bekend vanwege de beroemde Ebstorfer wereldkaart uit de 13e eeuw, zijn uitgebreide middeleeuwse inrichting en zijn handschriftenbibliotheek.
Het klooster werd gesticht door Volrad van Bodwede, graaf van Dannenberg en neef van Hendrik de Leeuw. In 1197 werd het voor het eerst officieel vermeld. Het behoort tot de zes Lüne-kloosters die na de Reformatie evangelische conventen werden.
