Este molino catalogado es sin duda el más conocido de la región de Quercy, porque está abierto al público desde hace mucho tiempo, pero también y sobre todo por su magnífico entorno paisajístico y su hermoso edificio fortificado. Su historia, estrechamente ligada a los monjes cistercienses de la abadía de Alix, comenzó en el siglo XIII. Cuenta con nada menos que cuatro pares de muelas que solían producir 3 toneladas de harina al día. El Sr. Faure muestra el museo a los visitantes y se lo pone fácil. Subraya todos los procedimientos introducidos por los monjes para impedir que los saqueadores entren y roben la harina. Los modelos facilitan la comprensión de su funcionamiento.
