Le château détruit pendant la guerre de Trente Ans a été reconstruit de 1655 à 1659. Une extension a eu lieu en 1722, achevée seulement en 1761. De 1969 à 1973, le château de Gymnich a été restauré. En tant qu'ancienne maison d'hôtes du gouvernement fédéral, le château a accueilli des contemporains célèbres comme la reine Elizabeth, la reine Silvia, le roi Juan Carlos I et de nombreux membres du gouvernement fédéral. À partir de 1998, les musiciens irlandais de la famille Kelly ont vécu pendant quelques années dans le château.
