Le restaurant Harakina est situé dans le quartier du Grand Bayonne.
Prenez une triplette de potes : Séverine Santucci, cuisinière de première passée par Ferrandi, Paul Crespin, ancien financier reconverti dans la boucherie-charcuterie, et Mathieu Lapios, vinophile adepte des jus sans chimie ; placez-les sous les arcades du vieux Bayonne et vous obtiendrez Harakina (« boucher » en basque), bistrot cochon où la grande vedette, le kintoa de la ferme Landaia, tient clairement le haut de l’affiche. Ce qui donne des assiettes franches du collier, fricotées en tandem avec le British Alex Mahood (ex-Jones à Paris), qui épaule la cheffe pour un temps.
