Il ristorante Harakina si trova nel quartiere Grand Bayonne.
Prendete un trio di compagni: Séverine Santucci, cuoco di prim'ordine diplomato al Ferrandi, Paul Crespin, ex finanziere che si è dato alla macelleria e alla salumeria, e Mathieu Lapios, appassionato di vino e di succhi di frutta senza sostanze chimiche; metteteli sotto i portici della vecchia Bayonne e otterrete Harakina ("macellaio" in basco), un bistrot di carne di maiale in cui la grande star, la kintoa della fattoria Landaia, è chiaramente al centro della scena. Il risultato sono piatti che vengono direttamente dal colletto, creati in tandem con lo chef britannico Alex Mahood (ex-Jones a Parigi), che assiste lo chef per un po'.
