Il nome "Falstaff" si riferisce al personaggio omonimo nell'opera di William Shakespeare, John Falstaff. Shakespeare lo fa apparire nell'opera "Enrico V" e "Le allegre comari di Windsor". È una persona libertina che ama il vino. Da qui il legame con questo locale, originariamente concepito come un wine bar. Anche Orson Welles utilizza questo personaggio nel suo film omonimo. Lo stile di Horta è innegabile in questa brasserie unica. La causa è che il falegname e interior designer Houbion, che all'epoca lavorava per il barone Horta, ha vestito l'edificio all'inizio del XX secolo. Il ritratto di Falstaff è ancora visibile in una vetrata del caffè. Nell'ottobre 2000, il Falstaff è stato classificato dalla Commissione Reale per i Monumenti e i Paesaggi.
