La birreria Chimay è una birreria presso l'Abbazia di Scourmont, un monastero trappista a Chimay, Hainaut, Belgio, ed è una delle undici birrerie nel mondo che producono birra trappista. Producono tre birre: Chimay Rouge, Chimay Bleue e Chimay Blanche; e una patersbier per i monaci. Il monastero produce anche quattro varietà di formaggio.
La birreria produce tre birre così come una patersbier per i monaci stessi, che viene occasionalmente venduta come Chimay Gold; sono conosciute come birre trappiste perché sono fatte in un monastero trappista. È stata la prima birreria a utilizzare la designazione Trappist Ale sulle sue etichette.
