Chimay Bryggeri er et bryggeri ved Scourmont Kloster, et trappistkloster i Chimay, Hainaut, Belgien, en af de elleve bryggerier verden over, der producerer trappistøl. De laver tre øltyper: Chimay Rouge, Chimay Bleue og Chimay Blanche; samt en patersbier til munkene. Klosteret laver også fire varianter af ost.
Bryggeriet producerer tre øltyper samt en patersbier til munkene selv, som lejlighedsvis sælges som Chimay Gold; de er kendt som trappistøl, fordi de laves på et trappistkloster. Det var det første bryggeri, der brugte Trappist Ale-betegnelsen på sine etiketter.
