Il chevalier-montrachet è un vino francese a denominazione di origine controllata prodotto nel clima del Chevalier-Montrachet a Puligny-Montrachet, in Côte-d'Or. È classificato tra i grand cru del vigneto della costa di Beaune.
L'editto dell'imperatore romano Domiziano, nel 92, vietava la piantagione di nuove vigne al di fuori d'Italia; fece estirpare parzialmente le vigne in Borgogna per evitare la concorrenza. Il vigneto risultante era sufficiente alle esigenze locali. Ma Probo annullò questo editto nel 280. Nel 312, un discepolo di Eumene redasse la prima descrizione del vigneto della Côte d'Or.
