Questo stabilimento, situato al confine tra Arbis ed Escoussans, fu probabilmente costruito nella seconda metà del XV secolo. Prende il nome da un armaiolo milanese, Ambroise de Karoles, che si stabilì a Bordeaux nel 1485. Inizialmente associato ad altri tre italiani, si stabilì a Escoussans nel 1490, probabilmente su richiesta di Gaston de Foix, conte di Benauges. Questo mulino, noto anche come moulin neuf (mulino nuovo), fu probabilmente ricostruito dopo la fine della Guerra dei Cento Anni e fu utilizzato per battere le piastre per le parti dell'armeria, oltre che per macinare il grano.
