L'Auberge chez Lazare si trova nel comune di Arros-de-Nay, nel cuore del Pays de Nay. L'Auberge è un ristorante tradizionale gestito da Christophe. È stato fondato dal suo bisnonno, Lazare, nel 1874 intorno alle cave di Labassères.
Nel suo angolo del ristorante, lo chef mette in evidenza una delle specialità del Béarn: la Poule au Pot. È stata istituita dal re Enrico IV. È una ricetta a base di pollo cotto in brodo con verdure e riso. Per deliziare il palato, Christophe utilizza ingredienti freschi e locali. C'è anche una terrazza con vista sulla campagna circostante, per godersi l'aria fresca!
