La Maison Gublin è riuscita a sfruttare al meglio questo antico edificio della Champagne, attualizzandolo. Dopo aver attraversato una piccola sala illuminata da un tetto di vetro, si entra in una luminosa sala da pranzo, decorata con travi e pareti a graticcio. Lo chef, Patrick Gublin, proviene da un ambiente agricolo. Sua madre, eccellente cuoca, gli ha trasmesso fin da piccolo il gusto per la buona cucina familiare e soprattutto gli ha insegnato a scegliere le verdure migliori e le erbe più profumate per accompagnare e valorizzare una preparazione culinaria.
Il ristorante è chiuso a pranzo dal lunedì al venerdì. Vi diamo il benvenuto tutte le sere, oltre che il sabato e la domenica a pranzo.
