La distilleria Moon è stata creata nel settembre 2017 ed è la prima distilleria a produrre whisky a Bordeaux.
Tutte le fasi di produzione per realizzare questi whisky sono svolte in loco, dalla fabbricazione della birra all'invecchiamento in botte.
La particolarità del processo di invecchiamento applicato a questi whisky è che viene effettuato esclusivamente in botti di Bordeaux Grand Cru, in un bunker della Seconda Guerra Mondiale adiacente alla distilleria, che funge da cantina di invecchiamento per i whisky Moon Harbour.
Il restauro di questo edificio ha permesso di ancorare la distilleria al patrimonio della Gironda.
Le visite, complete e istruttive, comprendono l'intero processo di produzione, compresa l'area di stoccaggio delle materie prime, la sala tini, la sala alambicchi e il bunker, e si concludono con una degustazione.
