De brouwerij werd in 1863 opgericht door Adolf Hüppe. De zetel van de brouwerij was toen in de Krummen Straße, in het gebouw van de huidige Volkshochschule Detmold. De bierkelder op Büchenberg diende als opslag. Omdat expansie in de stad niet mogelijk was, verwierf Hüppe percelen aan de Palaisstraße, waar eerst grotten werden gegraven en op de puinbergen het brouwerijgebouw werd opgericht. Sinds 1863 wordt er aan de Palaisstraße gebrouwen, het bedrijf wordt al in de vijfde generatie als familiebedrijf geleid. De huidige directie bestaat uit Renate Strate en haar dochters Simone en Friederike. Het bedrijf heeft meer dan 30 medewerkers in productie en administratie.
