In het uitzonderlijke kader van een 18e eeuws gebouw en het beboste park, geeft dit restaurant voorrang aan lokale producenten en seizoensgroenten. Het team besteedt bijzondere aandacht aan de plantaardige component van de menu's. In de keuken en aan het hoofd van de zaak selecteert Olivia Gautier zorgvuldig de beste producten van naburige boerderijen met uitsluitend "huisgemaakte" menu's.
