Het Excelsior blijft een van Nancy's beroemdste voorbeelden van Art Nouveau. De Art Deco aanbouw en trapleuning ontworpen door Jean Prouvé passen perfect bij het decor van de grote eetzaal, die in 1911 werd geopend en voorzien is van Majorelle/Daum kroonluchters, Majorelle meubilair en Gruber glas-in-loodramen. Deze brasserie is een uitzonderlijke plek!
Louis Moreau stond aan de basis van de creatie van deze brasserie, die hij wilde gebruiken als luxe uitstalkast voor zijn brouwerij in Vézelise.
