L'Excelsior rimane uno dei più famosi esempi di Art Nouveau di Nancy. L'ampliamento e la ringhiera della scala in stile Art Déco disegnata da Jean Prouvé si combinano perfettamente con l'arredamento della sala da pranzo principale, inaugurata nel 1911 e caratterizzata da lampadari Majorelle/Daum, mobili Majorelle e vetrate Gruber. Questa brasserie è un luogo eccezionale!
La creazione di questa brasserie si deve a Louis Moreau, che voleva farne una vetrina di lusso per il suo birrificio di Vézelise.
