Het project Table des Merville is het geesteskind van een paar restauranthouders die hun gasten "thuis" willen ontvangen, in hun leven van ontdekkingen, ontmoetingen en herinneringen... De nieuwe sobere en elegante architectuur begeleidt de droomwereld van de Mervilles.
De keuken staat natuurlijk centraal in dit universum, gastvrij en open naar de eetzaal, met een menu dat elke maand verandert volgens de producten en de seizoenen.
Specialiteiten: foie gras du Lauragais, tournedos van rode tonijn, lamsdeclaratie; cassoulet (wereldkampioen, Toulouse, 2019); krokante millefeuille met Bourbon vanille, warme karamel.
