Das Projekt "La Table des Merville" wird von einem Gastronomenpaar getragen, das die Gäste "zu Hause" empfangen möchte, in ihrem Leben, das aus Entdeckungen, Begegnungen und Erinnerungen besteht... Die neue, schlichte und elegante Architektur begleitet das Traumuniversum der Mervilles.
Die Küche nimmt in diesem Universum natürlich den zentralen Platz ein, sie ist einladend und zum Saal hin offen, die Speisekarte wechselt monatlich je nach Produkten und Jahreszeiten.
Spezialitäten: Foie gras aus dem Lauragais, Tournedos vom Roten Thunfisch, Lammvariationen; Cassoulet (Weltmeister, Toulouse, 2019); knusprige Millefeuille mit Bourbon-Vanille und heißem Karamell.
