Gelegen in het hart van Biarritz, op slechts 5 minuten lopen van het Grande Plage. Het Cocina-project is ontstaan uit een ontmoeting tussen Gilles Grasteau en Maëlle Redondo. Hun gedeelde passie voor gastronomie, Baskenland en Spanje bracht hen ertoe Biarritz te kiezen vanwege de geschiedenis, cultuur en omgeving. Ze besloten een warme en gastvrije plek te creëren waar mensen hun passie voor lokale producten en gastronomische gerechten kunnen delen.
Hun hoge standaarden beginnen bij de keuze van de producten, om ervoor te zorgen dat deze seizoensgebonden en vers zijn. Gilles werkt het hele jaar door aan de verschillende menu's voor de eetzalen. In deze creatieve geest, omringd door zijn zeer bekwame team, herleeft hij de grote klassiekers van de Franse gastronomie.
