Sylvain Caperaa, afkomstig uit de streek, heeft het roer overgenomen van zijn restaurant in Bordes, vlakbij de Safran-Turboméca-fabrieken, en zijn reputatie groeit.
Als liefhebber van lekker eten en muziek, met zijn betrokkenheid bij de organisatie van het Pyrène Festival, biedt deze chef, die zijn tanden heeft gezet in het werken met grootheden als Philippe Camdeborde en Éric Dequin, je een culinair avontuur.
Zijn menu's worden bepaald door seizoensproducten, het weer en zijn jarenlange ervaring in Corsica, Zwitserland en Savoie. Traditionele recepten worden herzien en gesublimeerd. Elke dag wordt er een ander huisgemaakt menu voorgesteld, en 's avonds is de gezellige, gastronomische bistronomie aan de orde van de dag.
