Net als bij goede wijn komen de mooiste koffies uit bepaalde regio's van de wereld waar de omstandigheden ideaal zijn om de beste koffie te verbouwen. Hiervoor heb je veel zon, vochtigheid en hoogte nodig. De beste koffies (veelal Arabica) komen dan ook uit Afrika, zoals Ethiopië (de bakermat) en Kenia en uit Zuid-Amerika, zoals Guatemala, Colombia en El Salvador. In deze landen vinden we de nog complexere en mooiere koffies waar vaak op kleinere estates (boerderijen) de boer met zijn vakmanschap en passie het allerbeste uit de bonen wil halen."
