De første spor af det, der nu hedder Brouwerij Boon, kan vi finde tilbage til 1680, da J.B. CLAES købte en gård for at etablere et bryggeri-destilleri. Bryggeriet kom i 1860 i hænderne på Louis Paul og i 1898 på familien Troch. Efter krisen i 1927 blev bryggeriet købt af Jean De Vits, hvis søn solgte det i 1978 til Frank Boon, der allerede beskedent var begyndt i 1975 i Halle som geuzesteker og handelsmand i lokale øl.
