El aire de nuestro valle está impregnado de cientos de levaduras silvestres específicas, siendo las más conocidas "Brettanomyces Bruxellensis" y "Brettanomyces Lambicus". Estas levaduras son únicas. Estos microorganismos le dan a Lindemans la oportunidad de elaborar cerveza según un método excepcional: la fermentación espontánea, también conocida como fermentación natural.
