Il castello distrutto durante la guerra dei trent'anni fu ricostruito dal 1655 al 1659. Nel 1722 avvenne un ampliamento che fu completato solo nel 1761. Dal 1969 al 1973 il castello di Gymnich è stato restaurato. Come ex casa per gli ospiti del governo federale, il castello ha ospitato noti contemporanei come la regina Elisabetta, la regina Silvia, il re Juan Carlos I e numerosi membri del governo federale. Dal 1998 i musicisti irlandesi della Kelly Family hanno vissuto nel castello per alcuni anni.
