Er is een sterke link tussen Lindemansbier en deze streek. Dit gebied beschikt over een uitzonderlijke microflora. De lucht van onze vallei is doordrongen van honderden specifieke wilde gisten, met als meest gekende de "Brettanomyces Bruxellensis" en de "Brettanomyces Lambicus". Deze gisten zijn uniek. Deze micro-organismen geven Lindemans de kans om bier te brouwen volgens een uitzonderlijke methode: de spontane gisting, ook wel natuurlijke gisting genoemd.
