Aubel è un luogo e comune nella provincia di Liegi in Belgio, nella cosiddetta regione di Platdietse. Il comune conta oltre 4000 abitanti. All'interno dei confini comunali si trovano oltre ad Aubel anche i villaggi di Sint-Jansrade, Godsdal e Kluis.
Aubel è conosciuto per i suoi prodotti tipici: formaggio herve, sciroppo, sidro e birra. Questi vengono venduti nei mercati il
martedì e la domenica mattina. In passato, il mercato di Aubel era molto famoso. Contadini da lontano e da vicino venivano ad Aubel per vendere i loro prodotti. Persino dalla zona di Sittard i contadini visitavano il mercato di Aubel. In particolare, il formaggio di Aubel, l'Aubeloise, è molto noto tra gli appassionati. È un formaggio dal sapore forte e piccante, ed anche dal profumo intenso. Il formaggio è protetto come Hervekaas tramite la qualifica europea: denominazione di origine protetta.
