Navnet Gold Ochsen nævnes første gang i Ulm i 1499. I 1597 grundlagde gæstgiver Gabriel Mayer bryggeriet og kroen Zum Goldenen Ochsen i den historiske del af Ulm. I de følgende år har firmaet gennemgået en række ændringer i ejerskab.
I 1812 blev bryggeriet købt af bryggeren og lauglederen Jakob Wieland. I 1867 solgte hans søn bryggeriet til familien Leibinger, som ejer det den dag i dag. Bryggeriet blev flyttet til en ny bygning i den nordlige udkant af byen. Som følge af bombningen af Ulm under Anden Verdenskrig fik bryggeriet kun lette skader, selvom 81% af byens centrum blev ødelagt.
