Allerede siden 1997 har Luc Vermeersch, grundlæggeren af bryggeriet De Leite, eksperimenteret med bryg i sin have. Til sidst tog han et bryggekursus, og ideen om at gøre tingene lidt mere professionelt voksede. I 2008 åbnede bryggeriet De Leite sine døre, kun tre år senere kom der allerede større kedler til. I dag brygges disse ales stadig på traditionel vis. Og det giver en fin kollektion af øl, der hver især er blevet velsignet med betydningsfulde navne.
