Das im 30-jährigen Krieg zerstörte Schloss wurde von 1655 bis 1659 neu erbaut. 1722 fand ein Ausbau statt, der erst 1761 fertiggestellt wurde. Von 1969 bis 1973 wurde Schloss Gymnich restauriert. Als ehemaliges Gästehaus der Bundesregierung beherbergte das Schloss bekannte Zeitgenossen wie Queen Elizabeth, Königin Silvia, König Juan Carlos I. und zahlreiche Mitglieder der Bundesregierung. Ab 1998 lebten die irischen Musiker der Kelly Family für einige Jahre im Schloss.
