Gemälde unterliegen zahlreichen Veränderungen, sodass ein Restaurator eingreifen muss, um ihre ästhetische Integrität wiederherzustellen. Sie hat 2011 einen Masterabschluss der Ecole de Condé in Paris in Konservierung und Restaurierung des Kulturerbes mit Schwerpunkt Staffeleimalerei erworben und ist regionale Preisträgerin des Wettbewerbs Ateliers d'Art de France 2019 in der Kategorie "Kulturerbe". Delphine Dollez arbeitet sowohl auf dem Leinwandträger als auch auf der Malschicht und an allen Arten von Gemälden, ob alt oder zeitgenössisch.
