The Ghent University is known worldwide for its extensive hop research. In 1949, hop research began. The main question was why the Czech Saaz hop, used by almost everyone in the brewing world, is so superior to our Aalst and Poperinge hops. In the 1960s and 1970s, the research was significantly expanded and they began to investigate what exactly determines the aroma or that bitter taste in hops. At that time, in 1971, Denis De Keukeleire wrote his doctoral thesis. Dekeukeleire unraveled the structures and formulas of the bitter substances in hops. As a result, Dekeukeleire and the "Ghent hop school" gained international recognition and fame.
