The farm, created in 1990 by a mareyeur d'Arcachon, has from the outset chosen renewable energies with geothermal energy as its main energy resource, thanks to the existing deep drilling, which allows for regular growth all year round. To obtain caviar from Siberian sturgeon, it takes 8 to 10 years. It is the echo that sorts the males from the females. After that, the females are kept and the males are used for the valorisation of the flesh. After 7 years and regular ultrasound scans, a sampling validates the choice of females for caviar production. All fish intended for caviar are slaughtered beforehand. Harvesting, sieving, rinsing and salting of the grains begins. The caviar is directly tinned.
