In this distillery, Prunelle de Troyes is still made according to the original recipe.
The cellar dates from the end of the 12th century, when it was known as the " cellier aux dîmes " (tithe cellar). The sales room is a 17th century canon's residence, with a tunnel leading from the cellar to the cathedral .
Wine merchants settled in the Cellier Saint-Pierre in the 1800s; it has been owned by the Formont family since 1933. Prunelle de Troyes has been distilled here since 1840 and won a gold medal at the 1900 World's Fair in Paris.
To make it, the plums are crushed and soaked in alcohol , which is then double distilled in a still.
The alcohol obtained is mixed with other natural ingredients to give the liqueur its complexity and production secret.
Prunelle de Troyes is a 40° liqueur that can be drunk after dinner, perhaps chilled, as a "trou Champenois" with sorbet or nougat, in a cocktail with Champagne or simply as a treat.
