Hay dos versiones para gourmets: salada y dulce. Del haba seca al delicioso hojaldre crujiente de chocolate y turrón, pasando por la crema de haba que hace que todos los pasteles se deshagan en la boca. Una auténtica delicia. Aquí se cuenta la leyenda. A finales del siglo XIX, el vigilante de la catedral de Soissons, llamado Le Paon, nunca abandonaba lo alto de la torre. Vigilaba la ciudad y los incendios mientras trabajaba como zapatero. Para alegrar su plataforma de piedra, empezó a plantar judías, que producía en grandes cantidades, lo que le permitía ofrecer a los turistas bolsitas de judías.
El jardín está siendo restaurado y reabrirá sus puertas en junio de 2025.
